One-Pot Sassy Honey Garlic Chicken & Rice Pasta

Ingredients:

1 lb boneless, skinless chicken breast, cubed
2 cups rice
1/4 cup honey
1/4 cup soy sauce
2 cups chicken broth
1 cup water
3 cloves garlic, minced
1 tbsp olive oil
1 tsp ginger, grated
Salt and pepper to taste
Green onions or sesame seeds (optional, for garnish)

Directions:

Heat olive oil in a large pot over medium heat. Add the cubed chicken, season with salt and pepper, and cook until browned (about 5-7 minutes).
Stir in minced garlic and ginger, cooking for an additional minute until fragrant.
Add honey, soy sauce, rice, chicken broth, and water to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for about 18-20 minutes, or until rice is cooked and liquid is absorbed.
Fluff rice with a fork, and serve warm, garnished with green onions or sesame seeds if desired.
