_Italian Meatball Soup_ ๐Ÿฒ

_A hearty, comforting soup filled with homemade meatballs, vegetables, and pasta._

_Ingredients:_

– 1 lb ground beef ๐Ÿฎ
– 1/2 cup breadcrumbs ๐Ÿž
– 1 egg ๐Ÿฅš
– 1/4 cup grated Parmesan cheese ๐Ÿง€
– 1/4 cup chopped fresh parsley ๐ŸŒฟ
– 2 cloves garlic, minced ๐Ÿ’ก
– 1 onion, chopped ๐Ÿ 
– 3 carrots, chopped ๐Ÿฅ•
– 2 celery stalks, chopped ๐Ÿฅ—
– 4 cups chicken broth ๐Ÿฒ
– 1 can (28 oz) crushed tomatoes ๐Ÿ…
– 1 tsp dried basil ๐ŸŒฟ
– 1 tsp dried oregano ๐ŸŒฟ
– Salt and pepper โ—๏ธ
– 1 cup small pasta shapes (e.g., ditalini, elbow macaroni) ๐Ÿ

_Instructions:_

1. Prepare meatballs: combine ground beef, breadcrumbs, egg, Parmesan cheese, parsley, garlic. Mix well ๐Ÿฎ
2. Form meatballs, about 1 1/2 inches in diameter ๐Ÿ
3. Sautรฉ onion, carrots, celery in olive oil until tender ๐Ÿ 
4. Add chicken broth, crushed tomatoes, basil, oregano. Bring to boil, then simmer 10 min ๐Ÿฒ
