Juicy Slow Cooker Turkey Breast 🦃🍽️

Ingredients
For the turkey:

3-4 lb (1.5-2 kg) boneless turkey breast, skin-on (or bone-in if preferred)
2 tbsp unsalted butter, melted
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp dried thyme (or 1 tbsp fresh thyme)
1/2 tsp dried rosemary (or 1 tsp fresh rosemary)
For the slow cooker:

1 cup (240ml) chicken broth
3 garlic cloves, smashed
1 small onion, quartered
2 celery stalks, chopped
1 carrot, chopped
For the gravy (optional):

2 tbsp butter
2 tbsp all-purpose flour
1 1/2 cups (360ml) strained turkey drippings or chicken broth
Directions
Prepare the turkey:

Pat the turkey breast dry with paper towels.
In a small bowl, mix the melted butter, olive oil, salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary.
Rub the seasoning mix all over the turkey, making sure to get under the skin for extra flavor.
Prepare the slow cooker:

Place the chopped onion, garlic cloves, celery, and carrot in the bottom of the slow cooker.
Pour in the chicken broth.
Place the turkey breast on top, skin-side up.
Cook the turkey:

Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the internal temperature reaches 165°F (75°C).
Once done, remove the turkey and let it rest for 10 minutes before slicing.
Crisp the skin (optional but recommended!):

Preheat the oven broiler to high.
Place the cooked turkey on a baking sheet and broil for 3-5 minutes until the skin is golden and crispy.
Make the gravy (optional):

Strain the turkey drippings from the slow cooker into a cup.
In a saucepan, melt 2 tbsp butter over medium heat. Stir in the flour and cook for 1 minute.
Gradually whisk in the strained drippings or broth. Simmer for 3-5 minutes until thickened.
Serve & enjoy! Slice the turkey and serve with mashed potatoes, roasted veggies, or stuffing for a perfect meal.
