Cheesy Garlic Butter Salmon with Spinach 🧄🐟

Ingredients:

For the Salmon:
– 4 salmon fillets (skin-on or skinless)
– 1 tablespoon olive oil
– Salt and black pepper to taste

For the Topping:
– 2 cups fresh spinach, sautéed
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese

For the Garlic Butter:
– 2 tablespoons butter, melted
– 2 garlic cloves, minced
– 1 teaspoon lemon juice
– 1/2 teaspoon dried parsley

Directions:
1. Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or foil.
2. Season the salmon fillets with salt and pepper, then place them in the baking dish.
3. In a small bowl, mix melted butter, minced garlic, lemon juice, and dried parsley. Brush the garlic butter mixture generously over the salmon.
4. Top each fillet with a layer of sautéed spinach. Sprinkle mozzarella and Parmesan cheeses evenly over the top.
5. Bake for 12-15 minutes or until the salmon is cooked through and the cheese is melted and golden.
6. Garnish with fresh parsley and serve with a side of lemon wedges.
