One-Pot Chicken Parmesan Pasta

Ingredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 cups uncooked penne pasta
3 cups chicken broth
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 tablespoon olive oil
Salt and pepper to taste
Fresh basil for garnish (optional)
Directions:
In a large pot, heat olive oil over medium heat. Add chicken pieces and season with salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 5-7 minutes.
Stir in minced garlic and cook for an additional 1 minute until fragrant.
Add uncooked penne pasta, chicken broth, and marinara sauce to the pot. Bring to a boil, then reduce heat and cover. Simmer for 12-15 minutes, or until the pasta is tender and most of the liquid has been absorbed.
Stir in mozzarella cheese and half of the Parmesan cheese until melted and creamy.
Serve hot, garnished with remaining Parmesan cheese and fresh basil if desired.
