BROILED SALMON WITH AVOCADO SALAD

Seriously the best 8-MINUTE BROILED SALMON WITH AVOCADO SALAD you will ever eat! I am all about the easy, elevated and flavorful recipes and this new one is a WINNER!! The salmon cooks to perfection in 8 minutes using your broiler and it’s served with an avocado salad on top which is basically like a tangy pesto made with parsley instead of basil. Give this recipe a try on a weeknight or even perhaps for a date night at home, it’s guaranteed romance :)
Makes 4 servings
4 6oz salmon filets
1/2 tsp kosher salt
1 tsp cumin
1/2 tsp ground black pepper
1 tsp olive oil
Avocado salad
2 avocados
1/2 cup italian parsley, chopped
1 lemon, zested and juiced
2 cloves garlic, mashed
1 tsp paprika
1 tsp cumin
2 tb olive oil
On a baking sheet, add a piece of foil or parchment paper flat. Add salmon and season with salt, cumin and pepper (or desired seasonings). Rub the top with olive oil. Place under the broiler for 8 minutes on the high setting (I do this on the lower rack in the oven so the parchment paper doesn’t burn). If you want your salmon cooked through, broil for 10-11 minutes (I like mine a bit pink inside). While the salmon is in the oven, make the avocado salad. Chop the avocado and parsley and add it to a medium bowl. Add remaining ingredients and toss to coat well. When the salmon comes out of the oven, top with the avocado salad and enjoy immediately.
