Ingredients:
For the Pulled Chicken:
2 lbs boneless, skinless chicken breasts π
1 cup barbecue sauce π
1 tablespoon olive oil π§΄
1 teaspoon smoked paprika πΆοΈ
1 teaspoon garlic powder π§
1 teaspoon onion powder π§
1/2 teaspoon black pepper π§
1/2 teaspoon salt π§
1/2 cup chicken broth (or water) π§
For the Sandwich:
4 sandwich buns π
Pickles π₯
Potato chips π
Fresh cilantro for garnish πΏ
Instructions:
Cook the Chicken:
Heat olive oil in a large pot over medium heat. Add chicken breasts and sear them for about 2-3 minutes on each side until golden brown.
Add chicken broth, paprika, garlic powder, onion powder, black pepper, and salt. Cover the pot and simmer for 20-25 minutes or until the chicken is fully cooked and tender.
Shred the Chicken:
Once the chicken is cooked, remove it from the pot and use two forks to shred it into bite-sized pieces.
Return the shredded chicken to the pot and stir in the barbecue sauce. Let the chicken simmer for another 10-15 minutes to absorb the sauce.
Assemble the Sandwiches:
Toast the sandwich buns lightly in a pan or oven.
Pile the pulled chicken onto the bottom half of each bun.
Top with fresh cilantro and serve with pickles and potato chips on the side.
