Roasted Cod with Vegetables and Creamy Oven Sauce ๐ฟ๐

A friendly and elegant recipe where the cod is infused with the flavors of vegetables and thyme. Simple and delicious, this dish is suitable for all occasions.
Ingredients (for 4 people)
4 cod fillets (about 150 g each) ๐
200 ml light or full-fat crรจme fraรฎche ๐ฅ
1 leek, finely chopped ๐ฑ
2 carrots, cut into small cubes ๐ฅ
1 onion, chopped ๐ง
A handful of cherry tomatoes, whole ๐
2 sprigs of fresh thyme ๐ฟ
1 tablespoon extra virgin olive oil ๐ซ
Salt and freshly ground black pepper ๐ง
Step-by-Step Preparation
Pre-cooking the vegetables
Preheat the oven to 180ยฐC. Heat the olive oil in a large frying pan. Sautรฉ the vegetables (onion, leek, carrots) over medium heat for 5 minutes. The vegetables should sweat slightly without losing their crunch.
Prepare the fish and vegetables
Arrange the cod fillets in a gratin dish in a single layer.
Spread the pre-cooked vegetables around them and add the whole cherry tomatoes.
Add the cream and herbs
Pour the crรจme fraรฎche over the fish and vegetables. Season generously with salt and pepper. Add the sprigs of thyme for an aromatic touch.
Oven cooking
Bake the dish in the preheated oven for 25 to 30 minutes. The cod should be opaque and the sauce lightly browned.
Service and accompaniment
Serve immediately, accompanied by rice, quinoa or steamed potatoes. Cover each portion with the creamy sauce and decorate with a pinch of fresh parsley.
