French Onion Meatloaf with Melted Swiss Cheese (Slow Cooker Style)

Ingredients:
– 2 lbs ground beef
– 1 cup breadcrumbs
– 1 large onion, thinly sliced
– 1 cup beef broth
– 1/2 cup Swiss cheese, shredded
– 1/2 cup grated Parmesan cheese
– 2 large eggs
– 2 tbsp Worcestershire sauce
– 1 tsp garlic powder
– 1 tsp onion powder
– 1/2 tsp salt
– 1/2 tsp black pepper
– 1/2 tsp dried thyme
– 1 tbsp olive oil

Directions:
1. In a skillet, heat olive oil over medium heat and sauté the sliced onions until they are soft and caramelized, about 10-15 minutes.
2. In a large bowl, combine the ground beef, breadcrumbs, shredded Swiss cheese, grated Parmesan cheese, eggs, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and thyme.
3. Add the caramelized onions to the meat mixture and mix until well combined.
4. Form the meat mixture into a loaf shape and place it in the slow cooker.
5. Pour the beef broth around the meatloaf in the slow cooker.
6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatloaf is cooked through.
7. About 30 minutes before serving, sprinkle additional Swiss cheese on top of the meatloaf and cover to allow it to melt.
8. Once cooked, carefully remove the meatloaf from the slow cooker and let it rest for a few minutes before slicing.
