The BEST Crab Bisque

Ingredients:
– 1 lb fresh crab meat
– 4 cups seafood stock
– 1 cup heavy cream
– 1/2 cup onion, diced
– 1/2 cup celery, diced
– 1/2 cup carrot, diced
– 4 cloves garlic, minced
– 1/4 cup dry sherry
– 2 tablespoons tomato paste
– 1 teaspoon Old Bay seasoning
– Salt and pepper to taste
– 2 tablespoons olive oil
– Chopped fresh parsley for garnish
Directions:
1. In a large pot, heat the olive oil over medium heat. Toss in the diced onions, celery, carrots, and minced garlic. Sauté until they become soft and fragrant.
2. Stir in the tomato paste and let it cook for another minute to enhance the flavors.
3. Pour in the seafood stock and bring the mixture to a gentle simmer, allowing all those lovely flavors to meld.
4. Add the fresh crab meat and sprinkle in the Old Bay seasoning. Let it cook for about 5 minutes so that the crab warms through.
5. Pour in the heavy cream and dry sherry, giving it a good stir to combine everything beautifully.
6. Let it simmer for another 10 minutes, then taste and season with salt and pepper as needed.
