Shrimp, Sausage, and Cabbage Rice 🍤🍚

Ingredients:

1 lb shrimp, peeled and deveined
2 sausages (preferably smoked sausage), sliced
2 cups cooked rice (preferably long-grain)
1 cup cabbage, chopped
1 onion, diced
2 garlic cloves, minced
1 bell pepper, diced
1 cup diced tomatoes
1 tsp smoked paprika
1 tsp ground cumin
Salt and pepper to taste
Fresh parsley or chives for garnish
Olive oil for cooking
Instructions:

Heat a large skillet over medium heat and add a bit of olive oil. Cook the sliced sausage until browned, about 5 minutes. Remove and set aside.
In the same skillet, add a little more olive oil and sauté the diced onion, bell pepper, and garlic for 3-4 minutes until soft.
Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque.
Stir in the cabbage and cook for an additional 2-3 minutes until it starts to wilt.
Add the cooked rice, diced tomatoes, smoked paprika, cumin, and salt and pepper. Stir everything together until well mixed and heated through.
Add the sausage back into the pan and mix it with the shrimp and vegetables.
Garnish with fresh parsley or chives and serve!
