Ingredients:
4 large bell peppers (any color)
1/2 lb crab meat, drained and flaked
1/2 lb cooked shrimp, chopped
1 cup cooked white rice
1/2 cup cream cheese, softened
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
1 teaspoon Old Bay seasoning
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Directions:
Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
Make the Filling: In a large mixing bowl, combine the flaked crab meat, chopped shrimp, cooked rice, cream cheese, mayonnaise, grated Parmesan cheese, Old Bay seasoning, garlic powder, and black pepper. Mix until everything is well incorporated.
Stuff the Peppers: Generously spoon the seafood mixture into each prepared bell pepper, packing it down slightly to fit as much filling as you can.
Bake the Peppers: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the filling is hot and bubbly.
