Blueberry Cottage Cheese Breakfast Bake

Ingredients:
– 1 cup cottage cheese
– 1/2 cup rolled oats
– 1/2 cup fresh blueberries
– 2 large eggs
– 1/4 cup honey or maple syrup
– 1/2 teaspoon cinnamon
– 1/4 teaspoon vanilla extract
– 1/4 teaspoon salt

In a mixing bowl, whisk together the cottage cheese, eggs, honey or maple syrup if you prefer, cinnamon, vanilla, and salt. Once thats all mixed, stir in the oats and then gently fold in the fresh blueberries. Pour this mixture into your prepared baking dish, ensuring its spread out evenly.
