French Onion Meatloaf

A rich and flavorful twist on a classic meatloaf, infused with caramelized onions and topped with gooey melted cheese.

Ingredients:

1 1/2 lbs ground beef

1 cup breadcrumbs

1/2 cup milk

2 large onions, thinly sliced

2 cloves garlic, minced

1 egg, beaten

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp dried thyme

1/2 tsp salt

1/2 tsp black pepper

2 tbsp butter

1/4 cup beef broth

1 cup shredded Gruyère or Swiss cheese

Instructions:

1. Preheat the Oven:
Set your oven to 375°F (190°C).

2. Caramelize the Onions:
Melt butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, for 15–20 minutes until golden and caramelized. Stir in the minced garlic for the last 2 minutes of cooking. Remove from heat and let cool slightly.

3. Prepare the Meat Mixture:
In a large bowl, mix together the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, Dijon mustard, thyme, salt, and black pepper. Fold in half of the caramelized onions and mix until just combined.

4. Shape and Bake:
Form the mixture into a loaf and place it in a greased loaf pan. Pour the beef broth over the top and bake for 45 minutes.

5. Add the Toppings:
Remove the meatloaf from the oven and spread the remaining caramelized onions over the top. Sprinkle with shredded Gruyère or Swiss cheese.

6. Final Bake:
Return to the oven for 10–15 minutes until the cheese is melted and bubbly.

7. Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. Serve warm and enjoy!
