Steak with Spinach Sauce and Corn

📝Ingredients:
**Corn:
– 3 ears of corn on the cob (or 2 cups cooked corn kernels)
**Spinach Sauce:
– 5 oz fresh baby spinach
– 1 large clove garlic
– 3 tbsp olive oil
– 1 tbsp balsamic vinegar
– ½ tsp cumin
– 1 tsp chili powder
– ¼ tsp salt
**Steak:
– 1 lb flank steak
– 1 tsp chili powder
– ½ tsp salt
– Freshly ground black pepper to taste
– 3 tbsp olive oil (divided)
– 4 oz crumbled feta cheese
– Chopped fresh cilantro or parsley for garnish
**Directions:
1. Grill or boil corn until tender. Set aside.
2. For the spinach sauce, sauté garlic in olive oil, then add spinach, cumin, chili powder, salt, and balsamic vinegar. Cook until spinach is wilted, then blend until smooth.
3. Season flank steak with chili powder, salt, and pepper. Heat 2 tbsp olive oil in a skillet or grill and cook the steak to your desired doneness.
4. Rest steak, then slice it thinly.
5. Plate the corn and steak, drizzle with spinach sauce, top with crumbled feta, and garnish with fresh cilantro or parsley. Enjoy! 😚
