🥒 Creamy Cucumber and Carrot Salad 🥕

This refreshing, creamy cucumber and carrot salad is perfect as a side dish for any meal! Made with crisp cucumbers, crunchy carrots, and a tangy, herby dressing, it’s light, fresh, and delicious.
✅Ingredients:
For the Salad:
2 large cucumbers, thinly sliced
2 medium carrots, julienned or thinly sliced
2 tbsp fresh dill, chopped
¼ red onion, thinly sliced (optional)
For the Dressing:
½ cup Greek yogurt (or sour cream)
2 tbsp mayonnaise
1 tbsp lemon juice
1 tbsp white vinegar
1 tsp honey (or sugar)
1 tsp Dijon mustard
1 clove garlic, minced
½ tsp salt
¼ tsp black pepper
✅Directions:
1️⃣ Prepare the Vegetables
Slice the cucumbers and carrots, and place them in a large bowl.
Add the chopped fresh dill and red onion if using.
2️⃣ Make the Dressing
In a separate bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, vinegar, honey, Dijon mustard, garlic, salt, and black pepper until smooth.
3️⃣ Combine & Toss
Pour the dressing over the vegetables and toss until well coated.
4️⃣ Chill & Serve
Cover and refrigerate for 15-30 minutes to allow the flavors to meld.
Garnish with extra dill and serve cold.
