Stuffed Potatoes with Shrimp & Beef 🍤🥔🍖

Ingredients:
For the Beef Stuffed Potatoes:
4 large russet potatoes 🥔
1 lb ground beef 🍖
1 cup shredded cheddar cheese 🧀
1/2 cup chopped broccoli 🌱
1 small onion, diced 🧅
1 teaspoon garlic powder 🧄
Salt and pepper to taste 🧂
For the Shrimp Stuffed Potatoes:
1/2 lb shrimp, peeled and deveined 🍤
1 tablespoon olive oil 🫒
1 teaspoon paprika 🌶
1/2 teaspoon garlic powder 🧄
1/2 cup shredded mozzarella cheese 🧀
1/4 cup chopped parsley 🌿
Salt and pepper to taste 🧂
Instructions:
Prepare the Potatoes:
Preheat your oven to 400°F (200°C).
Wash and pierce the potatoes with a fork. Bake for 45-60 minutes, or until tender. Once done, let them cool for a few minutes, then cut them in half and scoop out the insides, leaving a small border around the edges.
For the Beef Stuffed Potatoes:
In a skillet, cook the ground beef with diced onion, garlic powder, salt, and pepper until browned. Drain excess fat.
Add chopped broccoli and cook for an additional 3-4 minutes until the broccoli is tender.
Stuff the baked potato skins with the beef and broccoli mixture, top with shredded cheddar cheese, and return to the oven for 10-15 minutes until the cheese is melted and bubbly.
For the Shrimp Stuffed Potatoes:
In a pan, heat olive oil and sauté shrimp with paprika, garlic powder, salt, and pepper for 2-3 minutes until pink and cooked through.
Stuff the baked potato skins with the sautéed shrimp, sprinkle with shredded mozzarella cheese, and return to the oven for 5-7 minutes until the cheese is melted.
Garnish with chopped parsley and serve.
