Amish Onion Fritters

📌 Ingredients
🔹 For the Batter:
¾ cup all-purpose flour
1 tablespoon granulated sugar
1 tablespoon cornmeal
2 teaspoons baking powder
1–2 teaspoons salt (to taste)
¾ cup milk
🔹 For the Onions:
1½ medium onions, chopped (about 2½ cups)
🔹 For Frying:
Oil, for frying
🥣 Instructions
1️⃣ Prepare the batter: In a large mixing bowl, whisk together the flour, sugar, cornmeal, baking powder, and salt. Gradually add the milk and stir until a thick batter forms. Fold in the chopped onions, ensuring they are well coated.
2️⃣ Heat the oil: Pour about ½ inch of oil into a skillet and heat over medium-high heat until it reaches 350–375°F (175–190°C).
3️⃣ Fry the fritters: Drop spoonfuls of batter into the hot oil, slightly flattening them with the back of a spoon. Fry for 2–3 minutes per side until golden brown and crispy.
4️⃣ Drain and serve: Remove from the oil and place on paper towels to drain excess grease. Serve warm.
