Ingredients:
– 1 broccoli
– 4 potatoes
– Olive oil
– Salt
– Black pepper
– Dried garlic
– 1 onion
– 1 carrot
– 14.10 ounces (about 400g) mushrooms
– Basil
– 4 eggs
– Greek yogurt or sour cream (about 3.52 ounces or 100g)
– Milk (about 1/2 cup or 100ml)
– Cherry tomatoes
– Cheese (about 5.29 ounces or 150g)
– Small piece of Parmesan cheese
– Fresh basil leaves
– 1 cucumber
– 1 garlic clove
– Dill
– Juice of 1/2 lime
Directions:
1. Preheat the oven to 400°F (200°C).
2. Boil the potatoes in salted water until tender, then drain.
3. Chop the broccoli, onion, carrot, and mushrooms.
4. In a pan, heat olive oil and sauté the onion, garlic, carrot, and mushrooms until soft.
5. Add broccoli and potatoes to the pan, season with salt, pepper, and dried garlic.
6. Transfer the mixture to a baking dish.
7. In a bowl, whisk the eggs with milk, then pour over the vegetable mixture.
8. Sprinkle cheese and Parmesan on top.
9. Bake for about 25-30 minutes until golden and cooked through.
10. Serve with Greek yogurt or sour cream, and garnish with fresh basil and dill.
