Ingredients:
• 4 boneless, skinless chicken breasts (or boneless chicken thighs)
• 4 tbsp unsalted butter, melted
• 4 cloves garlic, minced
• 1 tsp salt
• ½ tsp black pepper
• 1 tsp paprika
• 1 tsp dried oregano
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp chili powder (optional, for a spicy kick)
• 2 tbsp fresh lemon juice
• 1 tbsp lemon zest
• ½ cup chicken broth
• 1 tbsp honey (optional, for a hint of sweetness)
• 1 tbsp cornstarch + 2 tbsp water (optional, for thickening sauce)
• Chopped fresh parsley, for garnish
Instructions:
1. Prepare the chicken: Pat the chicken dry with paper towels, then season with salt, pepper, paprika, oregano, garlic powder, onion powder, and chili powder (if using).
2. Place in crockpot: Arrange the chicken in the bottom of the slow cooker.
3. Make the sauce: In a bowl, mix melted butter, minced garlic, lemon juice, lemon zest, chicken broth, and honey. Stir well and pour over the chicken.
4. Cook: Cover and cook on low for 5-6 hours or high for 2.5-3 hours, until the chicken is tender and fully cooked.
5. Thicken the sauce (optional): If you want a thicker sauce, mix cornstarch with water and stir it into the crockpot. Let it cook for another 10-15 minutes until thickened.
6. Serve: Garnish with fresh parsley and serve with rice, mashed potatoes, or roasted vegetables.
Tips:
• Add chopped potatoes or carrots to the crockpot for a complete meal.
• For a creamy version, stir in ¼ cup heavy cream at the end of cooking.
Enjoy!
