🍤 Lemon Garlic Shrimp with Asparagus & Cauliflower Rice 🍋✨

A light, flavorful, and protein-packed meal that’s perfect for a healthy and delicious dinner!

📝 Ingredients:

For the Lemon Garlic Shrimp:

1 lb shrimp (peeled & deveined)
1 tbsp olive oil
1 tbsp butter
2 cloves garlic (minced)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp smoked paprika
1 tbsp lemon juice
1 tsp fresh parsley (chopped)
For the Roasted Asparagus:

1 bunch asparagus (trimmed)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
1 tbsp Parmesan cheese (optional)
For the Cauliflower Rice:

2 cups cauliflower rice
1/2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
🍽️ Directions:

1️⃣ Cook the Lemon Garlic Shrimp:

Heat olive oil and butter in a pan over medium heat.
Add garlic and sauté for 30 seconds.
Toss in shrimp, salt, black pepper, and smoked paprika.
Cook for 2-3 minutes per side until shrimp turns pink.
Squeeze lemon juice over the shrimp and sprinkle with fresh parsley.
2️⃣ Roast the Asparagus:

Preheat oven to 400°F (200°C).
Toss asparagus with olive oil, salt, black pepper, and red pepper flakes.
Roast for 10-12 minutes until tender.
Sprinkle with Parmesan cheese if desired.
3️⃣ Prepare the Cauliflower Rice:

Heat olive oil in a pan over medium heat.
Add cauliflower rice, garlic powder, salt, and black pepper.
Sauté for 3-5 minutes until tender.
4️⃣ Assemble & Serve:

Plate the cauliflower rice, roasted asparagus, and garlic shrimp.
Garnish with lemon wedges and fresh parsley.
Serve warm and enjoy!
