Ingredients:
– 1 cup cream cheese, softened
– 1/2 cup sugar
– 1 cup Greek yogurt
– 3 eggs
– 1 cup chopped walnuts
– 1/4 cup melted butter
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– 8 sheets phyllo dough
– 1 cup honey, divided

Instructions:
1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch springform pan.

2. Create the walnut mixture by combining the chopped walnuts, ground cinnamon, and half of the honey in a bowl. Set it aside to let the flavors meld.

3. In a separate bowl, prepare the cream cheese mixture. Beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, ensuring each is well incorporated before adding the next. Mix in the Greek yogurt and vanilla extract until everything is fully combined.

4. Begin layering the phyllo dough. Brush the bottom of the springform pan with melted butter. Place 4 sheets of phyllo dough into the pan, brushing melted butter between each layer for added richness.

5. Spread half of the cream cheese mixture evenly over the phyllo dough. Then, sprinkle half of the walnut mixture on top, allowing the flavors to layer beautifully.

6. Add another layer of phyllo dough using 4 more sheets, repeating the basting with melted butter between each sheet. Pour the remaining cream cheese mixture over this layer and top with the leftover walnut mixture.

7. Complete the cheesecake with another 4 sheets of phyllo dough, brushing the top layer generously with melted butter. This will give it a delightful golden crust.

8. Bake in your preheated oven for 45-50 minutes or until the top is beautifully golden brown and the cheesecake has set.

9. While the cheesecake is baking, warm the remaining honey in a small saucepan until it’s nicely heated.
