Corsican Stuffed Mussels (Moules Farcies)

Ingredients (12 items):
– 24 large mussels
– 2 cloves garlic (minced)
– Zest of 1 lemon
– ½ lemon (juiced)
– 2 tbsp fresh mint (chopped)
– 1 small onion, finely chopped (about ½ cup)
– ¼ cup fresh parsley (chopped)
– Salt & pepper (to taste)
– 2 tbsp extra virgin olive oil
– ½ cup breadcrumbs
– ¼ cup grated Pecorino cheese
**Instructions:
1. Prepare the Mussels: Clean the mussels and steam them in a covered pot over medium heat until they open. Remove from heat and let cool slightly. Discard any that don’t open.
2. Make the Filling: In a pan, heat olive oil and sauté onion and garlic until soft. Remove from heat and mix with breadcrumbs, Pecorino cheese, lemon zest, parsley, mint, salt, and pepper.
3. Stuff the Mussels: Remove one shell from each mussel, keeping the mussel attached to the other half. Spoon the breadcrumb mixture onto each mussel.
4. Bake: Preheat oven to 375°F (190°C). Place stuffed mussels on a baking sheet and bake for 10–15 minutes until golden brown.
5. Serve: Drizzle with lemon juice and enjoy warm.
